Hmm... Well I watch people usw them, seen them been used on TV, and tried them out myself, and I can -just- get a hold of them. Still prety useless though. So I guess all of them. But I'll say self-taught.

Well, the reason I asked, was cause if any one learned from Japan. I'd laugh my ass off.
The way they use chopsticks, it's hard to explain but it makes sense to us (me and my... Asian friends...>_>) that they are so small. It's hilarious.

Well.... it's just like... They believe it's too improper and disgusting to take huge bites of anything at once. So they eat little by little. Haven't you seen the anime? (Not all anime are like that though)
